Using Syrah and Viognier juice that sat on skins for three hours after being gently direct pressed for another wine, with Merlot berries floated, and topped with Gamay and white lees to make a unique dark pink wine. The high acid of the early picked Syrah and Viognier was rounded out by stirring the lees periodically.

Halcyon 2020 labels feature a photograph by Thuy and one of her favorite poems by Izumi Shikibu, a Japanese poet from the Heian period. The name is taken from the track we’ve danced to many times by the UK group Orbital.
