
2021 marked the first of what will be an ongoing series of wines fermented and/or aged in glass demijohn. A further homage the classic home winemaking vessel, the glass demijohn provides a neutral, reductive environment with a ovoid shape.
Demijohn 2021 is a lightly fizzy (frizzante) ancestral method wine made from 100% Marechal Foch. An interpretation of a Lambrusco, with a hint of residual sugar.
Harvested September 26th from 20+ year old vines in Summerland, BC.
Organically farmed (uncertified) - Minimal sprays: sulphur, organic liquid kelp concentrate

Whole bunches were very gently direct pressed. Still intact marc was removed from the press to soak overnight in the juice. The next day the juice was drained off into demijohn, and the remainder into stainless steel tank. Natural primary fermention began in glass demijohn, and was then bottled while still fermenting. Kept for 5 and half months on lees prior to disgorging.
Unfined & Unfiltered.
0.01 g/l added sulphur at disgorging.
