
Acqua Pazza is a low alcohol drink traditionally made by farmers in Tuscany from second press grape skins. Something light and refreshing to wash down lunch and get back to work, it translates roughly to crazy water. My Zio calls it vini’quad (vino acquado) in his Napolitano dialect.
This year’s Acqua Pazza Rosso comes from rehydrated second press whole cluster skins from AB Wine’s 2020 Syrah, and 2020 Zwiegelt, as well as a small percentage of fermenting Cab Franc juice.
Organically farmed - Vineyards in 2nd year of organic transition.
Natural fermentation, bottled while finishing fermentation for a nice frizzante.
0.01 g/l Sulphur added at bottling.
