Acqua Pazza is a low alcohol drink traditionally made by farmers in Tuscany from second press grape skins. Something light and refreshing to wash down lunch and get back to work, it translates roughly to crazy water. My Zio calls it “vini’quad” (vino acquado) in his Napolitano dialect.

Acqua Pazza Bianco comes from rehydrated second press skins from the Golden Mile Bench, including skin contact Muscat, skin contact Riesling, Viognier, as well as direct pressed Sauvignon Blanc, Pinot Gris, and Gewürztraminer juice.

Organically farmed - vineyards in 2nd year transition/ Sustainably farmed (minimal chemical sprays)

Natural fermentation, bottled while finishing fermentation for a nice frizzante.

No Added Sulphur.

Disgorged May 2021.
